Sauvignon de St-Bris 2007 - Pascal Bouchard, Burgundy
The Saint-Bris is a bit of an oddity in the Pascal Bouchard range as it the only wine made from Sauvignon Blanc.
The grapes are carefully chosen from the best vinegrowers in Auxerrois. On the nose, this is a fresh wine with floral aromas and all the typical characteristics of a Sauvignon Blanc. On the palate, this is a fruity, round and refreshing wine.
At the beginning of the 1980s, Joëlle and Pascal planted new vines, located in the best sites possible. Today, there now exists an outstanding estate of 33 hectares covering the four appellations of Chablis. With the wine quality produced from the estate, Pascal and Joëlle had huge commercial successes which lead to demand outweighing supply. They therefore, decided to complete their own production with purchased "must" (grape juice) from local family growers.
Pascal Bouchard aim is perfection from the vine to the bottle. All wine that carries the Pascal Bouchard signature carries high standards and passion.
